This Kenya has some serious layers. The initial luscious sweetness of a ripe plum is highlighted with the tangy zing of cherry and all supported by the herbaceous spice of cardamom.
Once a part of the Ngiriama Cooperative Society, the Kii factory now proudly belongs to the Rungeto FCS since 1997. Nestled with a view of Mt. Kenya, Kii gets its cherries from a crew of 80 farmers, working with varieties like SL28, SL34, Batian, and Ruiru 11. The cherries are sorted, pulped, fermented overnight, washed, and graded. Then, they are laid out on drying tables for 8-14 days. Kii factory also gives a nod to sustainability, encouraging farmers to compost the coffee fruit and recycle pulping water.
