This gem comes to us from coffee producer Gashu Tafese in Sidama, Ethiopia. Local farmers bring cherries to Gashu's dry processing plant in Hatesa where they are presorted and left to dry on raised beds. They are then checked for moisture before undergoing a second round of sorting to separate any remaining defects.
Sparklingly sweet with a light acidity this coffee is ideal for pour overs.
