Short Description:
Grown from the most admired Brazilian coffee region, Sul de Minas. This Brazil is the epitome of quality specialty coffee - one so flavorful and complex that we had to use it in our revered espresso blends. At a full roast, wonderful subtleties of nuts and chocolate emerge. Slight fruit notes add just the right amount of zest to its insanely rich flavor profile.

Coffee Details
REGION: Brazil
LOCATION: Sul de Minas
COOPERITIVE: Coopervitae
ELEVATION: 2700-3600 feet
VARIETAL: Mundo Novo, Catuaí
PROCESSING METHOD: Natural
CERTIFICATION: Fair Trade, Organic
ROAST LEVEL: Medium-Full
FLAVOR NOTES: Clean berry-like fruit, prominent baker’s chocolate with a delicate hazelnut that lingers on the finish. The sweet receptors on the tongue are definitely triggered by this Brazil but it is more of a rich sweetness that is very reminiscent of caramel. It possesses great creamy body with just enough brightness to qualify as "balanced."
Cooperative Information
Located in the Sul de Minas coffee growing region, there are only 45 organic growers in
this fledgling cooperative, producing coffee on small shaded farms on steep slopes at an average altitude of around 1200 meters. These small shaded organic farms seem more like a scene out of Nicaragua than the large rolling coffee fields of the Cerrado and the Mogiana.
This is the fourth year the Cooperative exported its own Fair Trade Organic
coffee. The production is still fairly small - only about 400 bags of this coffee was produced this year. It's a full sun-dried natural coffee, classic Brazil. We are excited to be one of the few roasters to offer this very special coffee and we're proud to help these small growers. This is a group well worth supporting.

Comments:
This was a perfect balance for our morning coffee. Medium body, smooth, yet rich. The chocolate and nut tones made for a lovely finish. We look forward to sampling all of your roasts...and choosing our favorites as gifts for our family and friends who are coffee aficionados! Thank you!
